How to Make Vegetarian Stuffed Shells
We didn’t even miss the meat in this…at all!
What You’ll Need:
1 pack of large pasta shells
1 jar of your favorite marinara sauce (our favorite is Whole Food’s Rao’s Roasted Garlic)
1 small container of ricotta cheese
1 pack of mushrooms
1 handful of spinach
2 garlic cloves
3 tbs fresh oregano
Shredded parmesan cheese
Shredded mozzarella cheese
chili flakes
Fresh basil
Salt & pepper to taste
How to Cook it:
Cook pasta shells according to package instructions
Sauté garlic, oregano, and mushrooms in olive oil. Add salt and pepper to taste.
Remove from heat and mix with ricotta cheese
Pour marinara sauce to cover the bottom of a baking dish and sprinkle parmesan
Stuff shells with a generous amount of the filling and line up shells on top of marinara sauce
Sprinkle with parmesan, layer more marinara sauce, and top with mozzarella and basil
Bake for 10 minutes at 400 degrees until bubbly. Enjoy!
