I hope that everyone had a nice long Labor Day weekend full of hanging out with loved ones and even catching up with laundry, but hopefully, definitely involving good food!
To me, long weekends and outdoor dining pretty much go hand in hand. These salmon kebabs are perfect for grilling or cooking in the kitchen to bring outside for a meal. This dish looks beautiful and is super simple to make. Here’s a step-by-step recipe for your next outdoor gathering-
1) Slice a salmon filet into one-inch pieces. If you’re like me and prefer skin on, be sure that your knife is sharp enough to cut through the skin easily. I find that the skin provides more flavor, texture, and (good) oils.
2) Thinly Slice lemons.
3) Skewer salmon pieces and lemon slices, alternating as you go.
4) Sprinkle dried oregano, salt, and pepper onto both sides of the salmon.
5) Drizzle olive oil over salmon on kebabs.
6) Grill on BBQ or cook over medium-high heat on pan for about 2 minutes on each side. The trick to good salmon is not overcooking it. It should be a light coral color with a texture that is soft and smooth inside rather than dry and overly flakey.
7) Garnish with dill.
8) Go outside.
9) Eat it.
Onto my salmon kebab inspired outfit. This is a great and comfortable ensemble for an evening picnic or BBQ. As the sun is about to set, the wind picks up and the weather cools, and now you’re not sure how to stay warm but not too warm. A light long sleeved top is the best pick for the twilight hours. Shorts, especially cutoffs can be tricky- sometimes they’re too loose around the thighs, which fail to show off your legs and booty, OR they’re way too tight around everything so you feel like you’re oozing out of them with every movement. However, these fit nicely due to a slight stretch to them so you can move freely as you walk over to the grill to grab some more salmon kebabs.
I never thought to match yellow with coral until I made these salmon and lemon kebabs. The lemon not only brings flavor to the salmon but it creates a contrast that makes all the colors more vibrant on their own. Similarly, the sweater’s coral horizontal stripes are accented by the bright pop of my yellow Tieks by Gavrieli. Tieks are fashionable foldable flats (alliteration intended) you can put in your purse to save you at the end of a high-heeled night out. They’re extremely comfortable, portable, and there are endless color combinations to choose from.
